Реализовался и как исполнитель. Еще в конце 1990-х годов совместно с Владом Забелиным выпустил альбом «Особенности национального шансона», где спел песни «С бодуна» и др.
В 2001 году как певец выпустил сольный диск с группой Евгения Бедненко «Хорус» «Обнимаю всех», куда вошли 14 песен, специально написанные для актёра поэтом Анатолием Поперечным и композитором Евгением Бедненко.
В феврале 2011 года вышел новый диск актёра «Старое танго» — поют Алексей и Людмила Булдаковы в сопровождении группы «Хорус» — песни Евгения Бедненко на стихи Дмитрия Здраевского.
11 марта 2014 года подписал Коллективное обращение к российской общественности деятелей культуры России в поддержку позиции Президента России Владимира Путина по Украине и Крыму.
Несмотря на огромную популярность после роли Иволгина, Булдаков отмечал: «Роль генерала меня одновременно возвеличила и подставила мне подножку, потому что создалось впечатление, что я дошел до творческого пика».
В 2000-е сыграл заметные роли в фильмах «Юбилей прокурора», «Участок», «Солдаты», «Парк советского периода», «Гитлер капут!», «Человек с бульвара Капуцинок», «Горчаков».
Как правило, играет военных и простых деревенских мужиков.
Особенно стоит выделить его роли бомжа Модеста Ричардовича Кузьменко (Боба) в сериале «Москва. Три вокзала» и охотника Глеба Сивого в криминальном детективе «Лесник».
Настоящей звездой Булдаков стал после роли генерала Иволгина в фильме Александра Рогожкина «Особенности национальной охоты». За основу для своего образа он взял генерала Лебедя. Позднее актер встречался с генералом.
Он вспоминал: «Он мне сказал: «Иваныч, ты знаешь, я тогда воспринял этот фильм как издевку. Я в то время, правда, его не видел, но кругом бум. Ну, думаю: «Ладно». Купил кассету. Поставил дома...». Интересуюсь: «Ну и как вам ощущения?». Отвечает: «В одном месте чуть не расплакался, настолько похож».
В 1995 году Булдаков получил премию «Ника» в номинации «Актёр».
Фильм стал настолько популярным, что было снято несколько продолжений. Образ генерала, созданный артистом, был очень необычным - интеллигент, играющий на пианино, говорящий на основных европейских языках, курящий сигары... Ряд фраз вроде «Ну, вы, блин, даете!» ушли в народ.

В кино дебютировал в 1982 году в фильме Леонида Марычева «Сквозь огонь» - сразу с главной роли: сыграл партизана Савелия. Затем снялся в лентах «Семен Дежнев», «В двух шагах от «РАЯ»», «Противостояние».
Исполнил роль знаменитого партизанского генерала Алексея Фёдоровича Фёдорова в картине Юрия Тупицкого «В лесах под Ковелем».
Среди других заметных работ советского периода - председатель колхоза Павел Зузенок в мелодраме «Вот моя деревня...», Сергей Рябинин в детективе «Тихое следствие», Иван Бачурин в фильме «Кому на Руси жить...», Портнягин в военной драме «Моонзунд».
Кризисные 1990-е вовсе не сказались на карьере актера - он активно снимался в фильмах и сериалах.

В 1969 году окончил театральную студию при Павлодарском драматическом театре им. А.П. Чехова. Далее служба в армии, после которой некоторое время работал в Томском театре. Оттуда ушел из-за конфликта с одним из режиссеров-постановщиков.
Вернулся в родной город и поработал на Павлодарском тракторном заводе. Затем опять оказался в театре. До 1976 года работал в театрах Павлодара, Томска, Рязани.
В 1976-1982 годах был актером Карагандинского областного русского драматического театра имени К. С. Станиславского.
В 1985-1993 годах - актёр Театра-студии киностудии «Беларусьфильм».
В 1993 году перебрался в Москву и был принят в труппу МХАТ им. Горького.

Алексей Булдаков родился 26 марта 1951 года в Макаровке Алтайского края. Отец - Иван Семёнович Булдаков (1922—1990), работал шофёром. Мать - Евдокия Максимовна Булдакова (в девичестве Бойко) (1921—2003).
Имеет двух сестер и двух братьев. Его братья - водители, одна сестра работала бухгалтером, другая - завскладом.
Спустя некоторое время после его рождения семья переехала в Павлодар.
В школьные годы занимался боксом и классической борьбой.
«Я до восьмого класса мечтал быть военным летчиком. В кружок ходил, планеры делал. Но я очень любил кино. Если два кинотеатра были рядом, то я брал билет на один сеанс, смотрел, перебегал дорогу и шел в другой кинотеатр. Сутками мог смотреть. И как посмотрел «Большую жизнь» с Петром Алейниковым, так и все. Решил актером стать», - рассказывал он.
